Spicy Chicken Pasta

When I was right out of college and teaching myself to cook, I tried to reverse-engineer Ruby Tuesday’s Sonora Chicken Pasta. I hate to date myself, but this was back in the days of Web 1.0 before seemingly everything was posted online. I didn’t want to literally recreate the dish, as I found the sauce too rich. I just wanted to perfect that creamy taste and texture that coated the noodles and tickled the back of your throat with a slight hint of spiciness. I never wrote down the recipe I eventually worked out, and it’s been at least five years since I last made it. The wife has been requesting it for months, so I thought I’d finally perfect the dish and record the recipe for posterity.

Pasta With Mushroom Cream Sauce

Ever since I started making my own noodles, I’ve come to realize that pasta sauce should be more like a gravy than a soup. I’ve been experimenting with thinner sauces lately and this one came out really good. It’s cheap and easy, but you have to take your time or it’ll come out bland.

Homemade Roasted Garlic Spaghetti

After my successful experiment with homemade linguine noodles over the weekend, I decided to make some spaghetti. Over the years, I’ve learned to experiment incrementally to see what my flavor limitations are. Like with bread, pasta is 95% flour. That means that you’d have to add a lot of another ingredient to be able to taste it. I thought I’d roast some garlic and mix it with some olive oil in lieu of an egg in the basic dough recipe. I figured even if we couldn’t taste the garlic, the noodles would be healthier.

Homemade Linguine Noodles

I’ve been wanting to make pasta noodles from scratch for a while. When we got a stand mixer for a wedding gift, we also got a ravioli attachment. I’ve always wanted to use it, but it seems pretty useless without a pasta roller. Since the pasta press attachment costs a cool $150, I thought I’d better buy a cheaper version first and make sure I’m using it often enough to justify the cost of going electric, so to speak. I picked up a manual pasta press for about $35 and decided to get down to business.

Cheap & Easy Pasta With Clam Sauce

I’m usually a stickler for fresh ingredients, but sometimes the prepackaged stuff is just easier. For my clam sauce, I like to use cans of minced clams. I sometimes eat these directly out of the can as a snack. It’s weird, I know, but I was never really a potato chip kind of guy. My mother always kept junk food in the house for my sisters, but she bought wild rice, minced clams and mac & cheese for me.

Grilled Shark Steaks Over Pasta With Spring Vegetables

We’re trying to eat a little more simply (and healthy) in the Chandler household. Instead of meat accounting for 70% of every meal, we’re reducing the fat and introducing more vegetables and grains to our diets. So instead of having the traditional lamb or pork dish this Easter Sunday, we decided to have some seafood.
