Roasted Broccoli Florets

I have a bunch of recipes that I’ve been meaning to blog for a while, and this is one of the better ones. I can’t remember where I originally got this idea; I think it was from some blogger’s variation that was a few degrees removed from an Ina Garten concoction. I’ve been roasting cauliflower for years, and I grill a lot of vegetables, but I think the best way to cook broccoli (and keep the meal healthy) is under the broiler.

Rich & Creamy Cheese Grits

I’m ashamed to say that I’ve never really cared for the typical Southern version of cheese grits. The grits are tasteless, the cheese is lumpy, and the eggs dry everything out. When the casserole cools down, you have to cut a cube out of the solid yellow mass and smash it down with the back of your spoon. That’s about as unappetizing as it gets. My version makes a rich and creamy dish that actually tastes like cheesy grits instead of a corn-based custard.

Creamy Pimento Cheese Recipe

I never really ate pimento cheese when I was growing up. My mother has always made a good version, but I went through an anti-mayonnaise phase that lasted many years. Ever since I’ve been experimenting with homemade mayo, I’ve also opened my mind to pimento cheese. I’ve created a version that is complex and creamy without the mayo aftertaste. It’s great cold, but it’s even better melted.

Homemade Mozzarella

A few weeks ago, my wife and I tried our hand at making mozzarella cheese. This kit from Leeners.com cost $25 and will make 6 pounds of cheese:

The kit cost over $30 after shipping and handling, and we'll have to buy six gallons of fresh milk. That might sound like a lot of effort and money for so little product, but it would cost us over $90 to buy that much fresh mozzarella from the grocery store. So we think it's a good deal — if the cheese tastes good.
